Normally "eu", "tu", "nós", "vós" are omitted in Portuguese sentences because the verb forms indicate the subject.
Let's see some examples of use of "ser":

(eu) sou Português.	I am Portuguese.
você é grande.	You are big.

Note:- All these states are permanent in nature. So "ser" verb is used.
